Last weekend, I attended the Food Hackathon at Cornell University.
A Hackathon is a blend of "hack" and "marathon," and this “Food Hackathon” was a three-day competition where students teamed up to develop new food products.
This year, San-J joined as a sponsor, and fermentation (with koji) was featured as one of the Hackathon’s themes! Among the students, San-J president Takashi and Mito-san, the production manager at San-J, provided advice on fermentation, while I had the enjoyable role of assisting with interpretation and adding a few comments alongside them.
This experience truly made me realize the incredible potential of koji fermentation in future product development in North America.
Let’s spread the word about koji among students!
Just imagining koji being incorporated into familiar products and Japanese koji becoming a part of Western daily life is thrilling.
All of the students' creations were impressive and inspiring.
I applaud each of you from the bottom of my heart.
And to the team that won an award—congratulations!
